IN THE KITCHEN: SPICY KALE SALAD


I was lucky enough to have my mom down here to visit us last weekend. We were able to go out for some great food but also made some excellent dishes at home.  While picking up some groceries at Mom's Organic Market we checked out their sandwich bar and found some good looking options. They had a spicy vegan sandwich that looked delicious so we decided to try and recreate the dish as a salad. This is what we came up with and it was so good I've been eating it almost everyday this week. It is also incredibly easy to put together for a quick lunch or dinner.

Ingredients:
1 bunch of curly kale
4-5 carrots shredded
1/2 green apple sliced thinly
1/4 cup shredded cheddar cheese
1 package Smoky Tempeh Bacon strips (can also make your own)

Dressing:
1-2 tablespoons olive oil (we used this, which has a kick)
2 tablespoons balsamic vinegar (this stuff is amazing)
salt and pepper for taste

Directions:
Remove stems from kale and wash thoroughly. Chop into small pieces and let dry for about 30 minutes. Meanwhile, cook the tempeh up on the stove and let cool while you prepare the rest of the salad. Shred the cheese and carrots and slice the apples.

Drizzle salad with olive oil and vinegar and toss to coat.  Add all ingredients to dry kale and add a dash of salt and pepper. Enjoy!
